The largest city in Georgia by a considerable distance, Tbilisi can justifiably claim to be the heart of the country. Squeezed between mountain ranges, the city fills the Mtkvari river valley.Having been the capital of Georgia for more than 1,500 years, in some form or another, Tbilisi is rich in history. However, as a city that hints at a new-found wealth, Tbilisi is undoubtedly changing. New building projects have added a touch of glamour to this historic city and contrast with the narrow streets, unchanged religious buildings and caravanserais (travellers' inns) of the old town.

Travel from Tbilisi to Kvareli via Signagi & Tsinandali
Drive from Tbilisi to Signagi visiting Bodbe Monastery en-route. Originally built in the 9th century but significantly remodelled, especially in the 17th century, the monastery now functions as a convent and is one of the major pilgrimage sites in Georgia due to its association with St. Nino, the 4th century Christian evangelist, whose relics are enshrined there.A short distance on is the fortified walled hill-town of Signagi. Weather permitting there are fine views of the Kakheti area and eastern Caucasus summits. The old section has narrow cobbled streets lined with typical houses complete with wooden balconies and shuttered windows. Now Signagi is a major hub in eastern Georgia, the town is well known for its wine, traditional carpets and 'Mtsvadi' (barbecue). Visit 'Pheasant's Tears' wine cellar to sample some of the best locally produced wines. After that, enjoy a traditional home-cooked meal, sample Georgian home-made wines and experience baking Georgian 'Shoti' (bread) with the local family. Before arriving in Kvareli stop at the Tsinandali Estate - House-museum of Georgian nobles and get acquainted with the oldest wines kept in their wine repository.End the day by spending a relaxing evening in the Wine Spa, taking Vinotherapie procedures.

Visit Khareba Winery Tunnels & Wine CellarsVisit unique wine cellar 'gvirabi' (tunnel) of the 'Khareba Winery' carved into the rock. These several kilometres long tunnels were opened in 1962 to host the World Wine Congress. Sample some of the finest wines while enjoying the beautiful views of the Alazani Valley and Kvareli vineyards. Visit the Gremi architectural complex, which consists of the Church of the Archangels Michael and Gabriel (16th c.), a three-story castle, a bell tower and a wine cellar.
Georgia Food & Wine: Travel from Kvareli to Tbilisi via Alaverdi Cathedral
Depart Kvareli for the Alaverdi Cathedral (11th c.) - the tallest cathedral of Kakheti. Meet Alaverdi Monastery monks, enjoy their 'qvevri' wines and learn the 'wine prayers' that make their wine taste so special. Visit Schuchmann Winery, taste premium quality Schuchmann and Vinoterra wines and delicious, bio food prepared especially for you.Return to Tbilisi for dinner at one of the best restaurants to enjoy the culinary masterpieces of Georgian chefs paired with the finest wine and spirits and the folk performance - traditional Georgian dancing.
Full Day Sightseeing to Mtskheta & UplistsikheDrive from Tbilisi to Mtskheta - the ancient capital, which lies in a lush valley at the confluence of two rivers, the Aragvi and the Mtkvari. It was founded 2,000 BC and was the capital of the Georgian Kingdom of Iberia between 500 BC and 500 AD. It is overlooked by the marvellously simple church of Jvari (6th c.), a perfect example of early Georgian Christian architecture. Also, visit Svetitsikhoveli Cathedral (11th c.), one of Georgia's largest remaining Cathedral and burial place of the Georgian Kings, notably members of the Bagrationi family. It has an extraordinary interior combining paintings, frescoes and a domed chapel. They are both UNESCO sites.En route to Uplistsikhe stop at Chateau Mukhrani, take a stroll in the estate, explore wine cellars of the Georgian princes and perfect the 'churchkhela' (Georgian sweet) making to perfection. After that, proceed to Uplistsikhe ('the Lord's citadel'), a cave town hewn into the living rock. The citadel dates back to the 7th century BC. It served as a strategic point on the ancient Silk Road from ancient times until the 15th century AD. It contains a large central hall for pagan rituals, living rooms, ancient theatre, wine presses, wine cellars, bakery, etc. Return to Tbilisi. Finally, have the option to visit a traditional bath house and bathe in the sulphur waters. (The entrance fee is paid locally).
